Scallion & Garlic *Vegan* Cream Cheese
There was a time when I thought I couldn’t go a day without dairy… especially cheese. But as I eat cleaner these days, I’ve realized that if I can cut refined sugar from my diet, I can pretty much cut anything out. All it takes is finding delicious alternatives. 🙂
This vegan cream cheese was such a revelation in my quest to minimize dairy in my family’s diet. Who knew cashews could work so well as a cheese alternative? And my kiddo absolutely loves it on everything. I somehow got him to eat BELL PEPPERS with this vegan cream cheese spread on it… (mom for the win!!).
Garlic & Scallion Vegan Cream Cheese Spread
Ingredients (makes 1 cup):
- 1 cup of cashews that have been soaked overnight (this makes for a smoother consistency)
- 2 scallion stalks, roughly chopped
- 1 clove of garlic
- 2 tbsp. of water (or 1 tbsp. of olive or canola oil if you want to add in some healthy fat)
- 1/2 lemon
- 1 tsp. onion powder
- 1 tsp. sea salt
Directions:
Add the cashews to a high-powered blender or food processor with the water or oil and the juice of half a lemon and puree until smooth. Add the garlic, scallions, onion powder and salt and blend again until fully incorporated.
Spread on whole grain or gluten-free bagels, use as a substitute for mayo on sandwiches or use as a dip for veggies!
