Almond Butter Chocolate Chip Protein Bites
Wow, it’s been awhile.
My excuse: I’ve traded work during naptime for napping during naptime… because, well, I’m growing two humans who are about to arrive any day now and then I chase around a toddler when I’m on the clock.
That said, this recipe was developed at the perfect time for me. And I plan to use it A LOT in the upcoming months as I breastfeed twins. I hope it comes in handy for other moms too– whether you want to use it for lactation support or just as a healthy snack for you and your kids (my 2-year-old is a huge fan of these).
Almond Butter Chocolate Chip Protein Bites
Ingredients (makes about 20 bites):
- 1 cup of nut butter (I tried both almond and peanut butter and liked this recipe with both… feel free to use your favorite!)
- 5 pitted dates
- 2 scoops of Shaklee’s ultra-pure, non-GMO Vanilla Life Protein or Plain and Simple Protein (if wanting to keep it purely Paleo)
- 1/2 c. of oats
- 1 tbsp. of maple syrup
- 1 tbsp. of water (plus a little more if the mixture seems too dry)
- 1/4 c. of no-sugar-added chocolate chips (such as Lily’s) or cacao chips
- 1/4 c. of nutritional yeast (if wanting to make these as lactation snacks for breastfeeding moms!)
Directions:
Place the nut butter, dates, protein, oats, maple syrup, nutritional yeast and water in a food processor and blend until smooth. Feel free to add a little more water if the mixture seems too dry.
Add in the chocolate chips and mix once more until fully incorporated.
Roll into bite-sized pieces and refrigerate for best results.
