Allergen-Free, No-Bake Lactation Cookies
Well, it’s safe to say I’m still on a sunbutter kick (as I make my third batch of apple cinnamon sunbutter bites 😉 ).
So when a mama friend of mine was looking for an allergen-free recipe for lactation cookies (also known as “booby bites”), I decided to see if I could come up with my own thanks to all of the sun butter I’ve stocked up on.
Prior to my due date, I made three huge batches of lactation cookies that I froze and would then reheat first thing in the morning for breakfast once B was born. Did they actually help with my milk supply? I’m honestly not sure. But the anticipation of eating one of those cookies in the morning was (besides my mocha almond smoothies) the only thing that could jolt me from my sleep-deprived zombie haze.
At the time, I was convinced lactation cookies were also healthy. After all, they contained oats, flax seed and nutritional yeast (which, nursing or not, is a great source of B vitamins).
Unfortunately, they also contained quite a bit of refined sugar (this was when I used to think organic cane sugar was somehow “healthier” than white sugar). So by 9 a.m., my energy and blood sugar were usually on a downward spiral.
Not only is this “booby bite” recipe allergen-free, it’s also refined-sugar-free so mamas can eat them throughout the day without sugar’s negative side effects.
Even if you’re not nursing, these lactation bites are a great snack for anyone thanks to the fiber-rich oats, vitamin-rich nutritional yeast, protein-rich sun butter and healthy fats of coconut oil. Even my toddler loved them.
Allergen-Free, No-Bake Sunflower Oat Chocolate Chip Lactation Cookies
Ingredients (makes about 15 bites):
- 1 c. of sun butter
- 1 c. of raw oats
- 3 dates, pitted
- 2 tbsp. coconut oil
- 1/4 c. dairy-free, no-sugar-added dark chocolate chips (I used Lily’s baking chips) or you could also use unsweetened dried fruit (such as cranberries or cherries)
- 2 tbsp. nutritional yeast
Directions:
Add the sun butter, dates and coconut oil in a food processor and blend until smoothe. Add in the oats and nutritional yeast and blend again. Finally, add in the chocolate chips and pulse about four to five times to mix in.
