Blueberry Muffin Smoothie
A confession my health-nut, *aspiring* sugar-free self shutters to admit… I LOVE blueberry muffins. Like, a lot. If muffins are on the table at brunch, there’s a 100 percent chance at least one will be on my plate.
Of course, what I don’t love so much (usually one to two hours later) is the fact that I just ate half a day’s worth of calories in about 10 bites. That, and the feeling that a stick of butter is sitting in my stomach.
That said, it’s so necessary in life to indulge every so often. But when you can craft a healthy alternative that tastes just as good? Bam! That’s best case scenario in my book.
The beauty of this recipe is that blueberry muffin fans can eat them every day, if they wanted to, without a single ounce of guilt. Packed with protein (I used Shaklee’s vanilla Life protein because I love that it contains Omega-3s and probiotics/prebiotics in addition to non-GMO, vegan protein), wholesome hearty oats, antioxidant-rich blueberries and cinnamon and the healthful fat of almonds, this smoothie is the answer to any and all blueberry muffin cravings.
Plus, it’s guaranteed to be a kid favorite, too. Add it to the breakfast rotation, and I promise it won’t disappoint.
