No-Bake Brownie Protein Bars
We are 7 weeks in. And still surviving. Without a nanny. (Woot woot!)
Being a mom to newborn twins and a toddler is pretty much what you’d expect… a balance of feeling like you’re supermom one minute and a hot mess the next.
That said, any recipe that’s no-bake is my go-to (when there’s actually time to bake). And since this nursing mama to twins gets hangry every 30 minutes, it’s a must that I keep a stash of high-protein snacks. My 2 year old helped make his new favorite “bownie baws” on a rainy day when every single toy was strewn across the house and mama needed some protein plus chocolate to save her sanity.
The best part is that these brownie bars are completely guilt-free…. gluten free, low glycemic and packed with plant-based protein.
No-Bake Brownie Protein Bars
Ingredients (makes about 12 squares):
- 1 c. of almond butter
- 5 dates
- 2 tbsp. coconut oil
- 3 scoops of Shaklee’s chocolate LIFE protein
- 2 tbsp. of unsweetened cacao powder
- 1/4 c. of unsweetened cacao nibs or no-sugar-added chocolate chips (plus a small reserve as a topping)
- Optional: pecans or walnuts
Directions:
Place almond butter, dates and coconut oil into a food processor. Grind until smooth. Add in the protein and cacao powder and blend again. If mixture looks too powdery, add a little water.
Finally, add in the cacao nibs or chocolate chips and optional nuts. Pulse just until they’re mixed in.
Press into a 5×7 pan, top with remaining cacao nibs and refrigerate for 3-4 hours. (Or just eat immediately if you’re a nursing mom).
