3-Ingredient, Sugar-Free Strawberry Popsicles
As the weather heats up, the cravings for icy cool nostalgic refreshments aren’t too far behind…
Like popsicles.
Unfortunately, they tend to be LOADED with sugar or high fructose corn syrup as well as artificial flavors and dyes… particularly the ones we used to slurp down as kids. I distinctly remember how my friends and I would show-off the various colors of the rainbow our tongues had turned. Like magic! (Cringe, cringe, cringe.)
As you’ve probably picked up on by now, I believe that if you can’t find a healthy version (or find that even the healthy ones contain sugar), make it yourself! And so, I experimented…
My version also adds a little protein and uses regular, full-fat yogurt because my growing toddler needs those extra calories… but feel free to substitute with coconut yogurt to make it vegan or low-fat yogurt to make it lighter. But the best part is that they’re super easy to make with minimal ingredients!
And I also found the most adorable mini popsicles molds. I actually got them for my electrolyte “labor pops” (using Shaklee’s lemon lime performance… and they were my savior).
3-Ingredient, Sugar-Free Strawberry Mini Pops
Ingredients (makes 9 mini pops):
- 1 cup of yogurt (or coconut yogurt, if vegan)
- 1/2 cup of strawberries
- 2 scoops of Shaklee’s vanilla protein
Directions:
Blend all ingredients together. Fill the pops just below the brim. Place sticks in and freeze for about three hours or until the sticks have “set.”
** Especially with the “mini” pops, always make sure you are supervising your children as they eat them, just in case.**
